ABOUT OUR MENU… Our menu continually changes. This is due both to the availability of seasonal ingredients as they come and go, and the varying yields of protein cuts acquired through our in-house whole animal butchery program. Creativity in using every part of an ingredient is what drives us to maintain sustainability with the goal of zero-waste. Exclusively featuring local meats and produce from ranches and farms across Texas supports local producers and reinvest in the local economy.
