Risotto and Chocolate

“The name is Italian for “complete” — its goal is to waste nothing, from using whole animals to every part of the seasonal produce. This’ll mean dishes like smoked ricotta, spiced goat, eggplant zeppole, chestnut pappardelle, along with a lot of risottos such as artichoke, tomato, pumpkin, pork, and more.

Intero will be run by chef Ian Thurwachter and Krystal Craig, who have been involved in the city’s culinary scene for quite some time. Thurwachter worked at both Vespaio and Enoteca Vespaio, as well as McGuire Moorman Hospitality Lamberts, Josephine House, and Jeffrey's. Craig currently runs Crave Artisan Chocolate.

Because of Craig’s cocoa background, Intero will include a chocolate counter. Truffles are on deck along with other take-home chocolates."
